Coffee is my thing. But yesterday was so hot, I could not consider drinking something hot. So I popped over to my parents to “borrow” a cup of ice! Seriously unprepared was I, with no ice in my freezer on a hot day.
Armed with the ice, I made some coffee, cooled it down, and popped it in the blender with the ice, and voila! Iced coffee! It was wonderful.

Separation will occur, so keep a spoon handy to keep stirring.
A little later I thought ice-cream would be a great idea. I have a freezer drawer full of frozen berries and banana, so this should be easy. Add a little coconut cream for a better consistency, and again that blender comes in handy.

I used a half banana, and a handful each of strawberries, raspberries and blueberries, with two tablespoons of coconut cream. It doesn’t look very professionally made, but it tasted great! There are no limits with dairy free ice-cream – you can add more coconut cream for a smoother, creamier consistency, or add more of one fruit than another to make different flavours.
