Hidden Veggies

I was discussing veggies with my personal trainer – I don’t eat enough of them. Side dishes are not my thing. One pot cooking is my thing though, much to my husband’s disgust. But this means if I am preparing lunches for myself, I can throw everything into one pot.

When you bulk up your food with veggies, the meal spreads. I had a 500g mince punnet that has just made 8 lunches. I added a large baby cabbage, two carrots, the world’s largest zucchini, two onions and about 400g of baby tomatoes. And of course spices.

I grated the carrots and zucchini before adding, as then they disappear into the mince and aren’t noticable.

 

 

I have always loved one-pot cooking! This way you don’t lose any of the nutrients the way you do if you boil veg in water. All the nutrients are in the gravy.

 

 

I filled 4 dishes – one for the fridge and 3 for the freezer – and each dish should be two lunches.
